NOW WE'RE COOKING: Cajun-bronzed tilapia

Have you ever blackened a fish with seasonings and spices? This is the same thing, but with different flavors. Think of it as blackened's cousin.

NOW WE'RE COOKING: Baked "fried" chicken

It's still summer. It's still super hot. And you're stilling trying to shed a few pounds. This recipe is a sneaky way to enjoy "fried" chicken without all of those extra, pesky calories.

NOW WE'RE COOKING: Grilled pizza

Just in time for summer, here's a new grilling recipe ... with PIZZA! If you make individual pizzas for everyone, they can top it how they want — perfect for parties on your deck in a warm July night.

NOW WE'RE COOKING: Pulled pork sandwiches

Did someone ask for an easy recipe? OK, maybe no one did out loud, but we all want easy go-to meals during the week — and this one has only THREE ingredients.

NOW WE'RE COOKING: Chicken piccata with lemon spaghetti

This dish is a classic preparation of chicken in Italian cooking. The gist is thinly pan cooked chicken, lemons, butter and capers served with a side — I always choose lemon spaghetti because it's easy and super yummy.

NOW WE'RE COOKING: Cheeseburger pizza

Need something simple to take during the week? Try this pizza. I make it with some store bought pizza dough and add toppings.

NOW WE'RE COOKING: Cuban pork roast and tostones

My co-worker Howard Reed was going out of town and had a problem. He had some plantains that would go bad while he was gone and needed to get them off of his hands. Who stepped in to help? Me, of course.

NOW WE'RE COOKING: Butternut squash soup

Attention bacon fanatics: This is the recipe for you. It sounds pretty healthy, but it's all cooked in bacon fat, so this is one that you only make twice a year. No matter what, everyone will be happy to eat this "veggie" soup.

NOW WE'RE COOKING: Fish tacos

This recipe is simple, fresh and easy to make — even on a busy weekday. Plus, you can prepare the fish and slaw a day beforehand, then cook when needed.

NOW WE'RE COOKING: Beef and spinach gyros

gy·ro noun \ˈyē-ˌrō, ˈzhir-ō\ : a sandwich especially of lamb and beef, tomato, onion, and yogurt sauce on pita bread

NOW WE'RE COOKING: Sunny morning muffins

I should say, "Now we're baking," which is something I never do, but I thought I'd try it out again. I made 26 muffins Sunday night and they're all gone — and have been since yesterday, that's how tasty they are.

NOW WE'RE COOKING: Chicken fried steak with gravy

I know, I know. It's been pretty warm for chicken fried steak, but it is good followed with a nap — plus, my boyfriend totally digs it. If he's happy, I'm happy, especially with a healthy helping of homemade cheddar mashed potatoes.

NOW WE'RE COOKING: Chicken jambalaya

For my birthday last month, my friend Tori Boone gave me lots of kitchen goodies, including Sandra Lee's cookbook — she's from the Food Network. I've been reading the book in and out trying to find the first recipe to make and I found this one. It's a little spicy, a little ricey and really good.

NOW WE'RE COOKING: Butternut squash wonton ravioli ...

... topped with fresh sage and chopped walnuts. Who doesn't love that? I know it may sound strange to have a ravioli in a wonton wrapper instead of pasta, but it's a really great short cut because wonton wrappers are readily available in many grocery stores — and they're already pre-cut for you. Life is good when it's easy — and tasty.

NOW WE'RE COOKING: Lemon and herb roasted chicken

I love roasted chicken, but not as much as I love Food Network chef Tyler Florence. He is — without a doubt — my celebrity crush. This is his recipe for some yummy chicken with tasty roasted potatoes. It's perfect to cook on a cold Sunday afternoon because it fills the whole house with warmth.

NOW WE'RE COOKING: Hearts of palm soup

My friend Emanuella Grinberg had brought to my attention that I have not written about any vegetarian recipes. So I asked my self, "Self, what is your favorite meatless meal?" And this is one that I adore. This soup is perfect on a cold, rainy day with a big piece of crusty bread. Emanuella, this one's for you.

NOW WE'RE COOKING: Chicken tikki masala

Everyone knows that I love Indian food, right? Well, the word got out to my friends over at the Baitul Baqi Mosque in Norcross and the Georgia Women's Chapter of the Ahmadiyya Muslim Community invited me out to teach me this recipe — it was amazing!

NOW WE'RE COOKING: Thai chicken soup

I found this recipe on the Food Network's website and tweaked it slightly. I had never cooked with curry paste or coconut milk, so this was quite the adventure. I'll let you know the dos and don'ts with both.

NOW WE'RE COOKING: Cheesy turkey meatloaf

This meatloaf is a crowd pleaser, because it is moist, tasty and it has cheese! I like to use ground turkey, since it is leaner and healthier than ground beef. Serve this up with some mashed potatoes and a side of veggies and you've got yourself a hearty meal.

NOW WE'RE COOKING: Ginger orange chicken

Let's face it. We all love Chinese take-out, but it can be extra fatty and you don't actually know all of the ingredients that go into the meal. Here's one of everyone's favorites: Ginger orange chicken — and now you can make it at home.
