Location: Blue Rooster is located in the same building complex as Yarn Garden Knit Shop, behind the Gwinnett Historic Courthouse.

Hours: 8 a.m. to 6 p.m. Mondays through Thursdays, 8 a.m. to 8 p.m. Fridays and Saturdays, closed Sundays

Atmosphere: The Blue Rooster is bright, fresh, clean with whites, blues and yellows throughout the space -- exactly how owners Kyle and Donna Cave wanted it.

"We have been pinning on Pinterest for years," Donna Cave said. "I think about a year ago we started pulling more stuff. I would Google bakeries and took little bits and pieces from them. We knew we wanted it bright and fresh and airy -- old school and modern at the same time."

There are fresh flowers on each table and two blue metal roosters on the walls.

Guests walk up to the front counter to order then find a spot at one of the blue tables with white wooden seats. The eatery is located at the end of a brick complex, so the inside has two walls of windows. Patrons can sit in the front to watch the cars and people go by on West Pike Street.

Menu: The Blue Rooster's full name includes Bake Shop and Eatery at the end of it. This time around, the Caves are sticking to a sweeter selection with a handful of soups, salads and sandwiches.

"We probably won't expand the menu because we're a bakery with deli sandwiches, and that's all that we are," Donna said. "We may rotate the meats around (for the sandwiches) and the salads for the summer. But we will always have the chicken salad available."

Most of the recipes were handed down through family. Kyle is in charge of the savory foods while Donna tackles the desserts, which are made daily.

"Until midnight every night," Donna said with a laugh.

She is still working on a regular rotation and menu for the sweet treats.

"So far, it's what we know that were the favorites in Lilburn," she said. "We're trying to get to add something special every day or every other day, but we haven't gotten there yet.

"But it's like we picked up where we left off."

The bakery's variety ranges from brownies and cupcakes to muffins and cinnamon rolls, plus there are signature coffees for a pick-me-up.

The Caves also offer special order cakes and pies for holidays, birthday parties, weddings and any other sweet occasion.
