ON THE MENU
• Burrito Mex Grill — Flour tortilla stuffed with grilled chicken or steak and beans, topped with cheese sauce and served with pice de gallo, guacamole, rice, sour cream and lettuce, $10
• Mexican salad with chicken — Grilled chicken on top of a spring mix of greens, topped with sliced avocados, tomatoes, bell peppers, onions and green olives with your choice of dressing, $10
• Pollo ranchero — Grilled chicken breast topped with a ranchero sauce and Chihuahua cheese, served with rice, vegetables and a cup of chicken soup, $11
• Camarones Salamandra — Ten jumbo shrimp filled with Mexican cheese and wrapped with bacon, served with a creamy chipotle sauce, rice, lettuce, onions, tomato and sliced avocados, $15

• Location: Salamandra’s is located in the Kroger shopping center at Grayson Highway and Rosebud Road.
• Hours: 11 a.m. to 10 p.m. Sundays through Thursdays, 11 a.m. to 10:30 p.m. Fridays and Saturdays
• Atmosphere: “Our idea is if you’ve had a stressful day, you come here and leave here saying that you forgot all of your problems,” said co-owner Bardo McDowell.
So, he and the other owners created a bright, vibrant atmosphere. The walls are red with works of art made of metal. Salamandra means salamander in English, which means the lanky amphibian is represented by colorful works of art everywhere in the dining rooms and bar area.
There are three dining areas with booths and tables to accommodate large amounts of people.
Salamandra’s also offer to-go food and catering for weddings, corporate events and parties.
• Menu: Salamandra’s serves Tex-Mex cuisine as well as authentic Mexican dishes, which means a little something for every one.
“We will change our menu to add more authentic dishes, like we did for the breakfast menu,” McDowell said.
Breakfast is served Sunday mornings with plates like chilaquiles and poblano enchiladas.
As for the food, everything is made in house except for the actual tortilla. That includes the sauces, hard shell tacos, preparations of the meats and desserts.
“We make everything from scratch — nothing is pre-cooked.” McDowell said. “We like when everyone comes and it’s good food. They leave happy.
“A lot of people talk about our meats because we use a good quality,” he added. “We won’t go cheaper, because if you do, you’ll be out of business in five years. We don’t change (what we buy) because of the costs.”
The restaurant has a full bar, but it is known for its Skinny Margarita. It doesn’t come out of a bottle. It’s made to order with Jose Cuervo Silver, fresh squeezed orange juice, lime, agave nectar and a splash of water.
“We have a few regulars who come here five or six times a week just for that margarita,” McDowell said.
• Things you might not know: The owners are planning to add a patio in the future for the warmer weather.

Visited twice. Service very good. Food was marginal at best, and prices are high. Food was served hot, but just did not have the flavor. Compared to a Monterey Mex Restaurant, or Pablanos at Webb Ginn, these folks are down the list of good Mexican food.
