Location: Pura Enchilada is inside a decades-old building along Pike Street heading out of the downtown area.
Hours: 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Fridays, noon to 11 p.m. Saturdays and 11 a.m. to 8 p.m. Sundays.
Owner: Forsyth County resident Amador Gutierrez has worked in the restaurant industry for the past 16 years. Driving along Pike Street in Lawrenceville one day he saw the perfect location to open a business.
"It's been my dream to own my own restaurant," Gutierrez said.
Atmosphere: Pura Enchilada has a vibrant atmosphere where authenticity is key. Most of the decor was made in Mexico, including a couple of pots Gutierrez got from his wife's sister, who used them for parties at her home there. The pots sit on a built-in shelf high above the dining area, where booth and regular table seating are provided. Behind a tall, partial wall is the bar area where the bar top is decorated with colorful stones set by hand. Gutierrez hopes to receive his liquor license and begin serving beer, wine and liquor in a couple weeks.
Menu: Pura Enchilada takes its name from its specialty: cooked-to-order enchiladas made with fresh ingredients from authentic recipes. The restaurant offers 13 different enchiladas, which consist of a handmade corn tortilla wrapped around a filling and covered with a sauce. Gutierrez said most customers simply start with the first enchilada on the menu the Aguascalientence, which is made with roasted red potatoes mixed with fresh cheese and chopped onions and topped with sour cream, cabbage and tomato sauce and then work their way through the remaining 12. Each enchilada is named for the city or region in Mexico from which it originated.
Pura Enchilada also serves burritos, tortas (Mexican-style sandwiches) tacos, fajitas and more. One of the most varied entree is the Molcajete, a smorgasbord of seasoned meats, including grilled chicken, steak, shrimp, chorizo, bacon and pork ribs served with cactus, green onions and two hand-made quesadillas along with sides of black beans and rice and a hot habanero sauce.
